Cooking in the Rotational Farming (Taj Aul Le Quv)

A very special collaboration between Panya Forest and P’gakeryaw tribal youth leaders of Hin Lad Nai village, Wiang Pa Pao, Chiang Rai, Thailand. We would love to invite friends and families to experience the sacred of food and relationship between human and forest. Come sit by my fire…our teacher always invite us to sit and share stories around the fire and that when the sacred of journey begins. so please come and join us on this journey!

This course is bilingual – in English and Thai.

Element of this beautiful journey

We will learn about Rotational/Ritual Farming, indigenous seed saving and the mythological cosmology that binds it all together.

We will learning about seasonal food and how eating in this way aligns our lives with Natures rhythms.

Let us feel the fulfilling heart and warm stomach with stories and connection that somehow we had forgotten.

“April ends and May begins. The rains come down, causing mustard seeds to sprout new green leaves all over the fields.”

“Rotating farming allows us to eat rice and vegetables from fields. Setting traps allows us to eat birds and mice from the forest along the field”

We will learn how to make “Ta Po Pheo” (or “Khao Beh” as known by the city people.)

We will trek to the rotational farm, learn about ancient methods of forest management, right relation and the rituals of rotational farming, then we will cook a “Gaeng Yen” (unheated curry). After that we will collect mustard greens to dry mustard greens for the dry season. Then we will make dried mustard greens chili paste, Muv saf toj baj k’e (Muv Sa To Ma Keo Eo) along with boiled pods with free-range chicken, Hpau di de hsau (Por Dee De So) once we are back home.

Ending with learning how to make Khao Puk or Khao Pung Nga (Mei toj hpiv ) along with tasting wild honey and sipping traditional tea harvested from the wild forest. Finally we end our time together with the hand-tying “calling of the spirits” ceremony.
